Six on Saturday

Happy New Year, fellow bloggers! It’s been a while since I posted “Six on Saturday” but after reading CadyLuck Leedy earlier today, I realized that I must crawl out of my Pandemic depressive doldrums and focus.

FOCUS. That’s my word for this year, my goal, my purpose ~ to focus on things that really matter, not waste any more time on idle self-pity. So today, on this first day of the first month of the year, I’ll begin by focusing on six winter scenes for our enjoyment.

On-and-off snow flurries cover roof tops and fence posts, then melt away by afternoon while, in the kitchen, a Dublin Coddle simmers in the slow cooker.

Dublin Coddle ~ an Irish sausage and potato stew

This simple Irish stew features fat sausages instead of lamb, along with chopped potatoes and onions, sometimes carrots for color and sweetness, simmered in beef stock. A slice of thick-cut bacon laid across the top adds richness to the flavor. Although great all winter, we’ll serve this stew for supper tonight.

For dessert, a slice of Irish soda bread, still warm from the oven, slathered with butter or spread with orange marmalade will be just the thing.

After supper, it will be time to turn on PBS television for the Vienna Philharmonic New Year’s Concert.

And then to bed while visions of ballet dancers waltz in my head.

Celebrating just over fifty years of holy matrimony, I am blessed to be a mother of two and grandmother of seven. Much of my writing speaks to the culture and tradition of the Deep South, where I spent the first thirty-five years of my life before relocating to the Pacific Northwest.   1. MY does that Dublin Coddle look GOOD! I think I will have to make that! We have been following a TV program on Netflix called “Someone Feed Phil.” It is so good! Phil visits different countries and particular cities, to eat! He was just in Dublin too! It is very interesting, the scenery and tales are fantastic and oh, the food! At the end of each adventure, he usually skypes home to talk to his elderly Jewish parents, who are a hoot! We are planned to visit a bazillion countries this year! I hope it all works out! I’m tired of postponing things. The first trip, Spring and Summer) is to the Ukraine (if no war going on) Romania, and Bulgaria and then to Turkey and a bunch of Greek Islands, then back to Athens for a while. Then off to more Greek Islands, Crete, Cypress and then on to Jerusalem for about a week! Our second trip, is from November and then home just before Christmas. That trip starts in Dubai, where we are staying in a 5 star hotel in the middle of the desert for a few days, then to Qatar, Oman and 6 other cities before we go to India, the Maldives, Thailand, Malasia and ending in Singapore, where we will stay for about a week! I can’t wait! I’m not getting any younger! I turn 75 next week! Cady
    PS I could eat that entire loaf of the Irish Soda Bread! Will have to make that too!
